The farm harvests six tonnes of Sauvignon Blanc grapes which have been grown on a limestone outcrop. The vineyard consists of rocky loam soil with a mixture of limestone and decomposed granite. Our cool-climate Sauvignon Blanc has a fine balance of green fig and ripe tropical fruit flavours; harvesting at an optimal ripeness of 23.5 B. The wine is given skin contact for 4 hours before being pressed, and is partly naturally fermented in our stainless steel tanks. The wine has been aged in our tanks for 6 months. Our Sauvignon Blanc flavours consist of nuances of grapefruit with mineralogy and weight on the mid-palate. This is a very food-friendly wine.
